There are so many Banana Bread recipes out there, it’s hard to say who has the best one. I have tried many of them and always come back to this one. I love to smell it baking!
It’s delicious and so easy to make. Go ahead, and compare this one to your favorite recipe.
1 1/2 cups very ripe bananas, mashed
2 teaspoons lemon juice
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) butter, softened
2 1/8 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk
chopped pecans (optional)
Preheat oven to 275 degrees bake for 45 – last 10 mins increase to 350 degrees
Step 1.) Mash up bananas really good with a fork and mix in lemon juice. Set aside.
Step 2.) In a medium bowl, sift together flour, baking soda & salt. Set aside.
Step 3.) In a large bowl, cream butter & sugar until fluffy.
Step 4.) Add in eggs, one at a time & then add in vanilla
Step 5.) Beat in the flour mixture alternating it with the buttermilk.
Step 6.) Stir in the banana mixture
Step 7.) Pour batter into two greased & flour loaf pans & bake in oven for 45 minutes to 1 hour or until toothpick inserted in center comes out clean.
Step 8.) Remove from oven and place directly into freezer to cool for
about 20-30 minutes. This will make the bread incredibly moist.
