6-7 potatoes
1 onion
1/2 teaspoon minced garlic (more if you like)
1 stick butter
salt and pepper to taste
Place a large cast iron skillet on the grill, add 1 stick of butter, garlic, and quarter an onion.
Melt the butter and cook till onions are soft not cooked. Add sliced potatoes with skins on. Cook on low heat for about 1 hour. Stir occasionally.
You can add red and green peppers for color and taste. Add bacon for an even better flavor.
