My sister Rafetta makes this squash relish every year. I finally for the first time today made a batch myself. We love it!

This recipe made exactly as directed is a GREAT way to use all your squash.
This time of year I am very busy canning what ever comes in. This is a delicious squash relish recipe. Wonderful with beans, hamburgers, and hot dogs.

So easy to make and well worth the time!

12 cups diced yellow squash, 2 cups diced onions, and 1 tablespoon canning salt

Mix and let stand 1 hour. After the soaking period, pour off water and rinse well.

Transfer to a stock pot and add the other ingredients-

1 cup chopped bell peppers

3 cups sugar

2 cups white vinegar

1 teaspoon celery seed

1 teaspoon mustard seed

1 teaspoon turmeric

1 teaspoon alum

1 (4 ounce) jar pimentos

Mix and boil 8-10 minutes. Put in jars and seal.
