red potatoes

Sour cream and heavy cream make these red potatoes pop! I love potatoes any way you fix them and this is one of my favorites. Great dish for one of those special dinners.

2 pounds red potatoes, unpeeled, cut into 1-inch pieces

2 tablespoons oil

½ cup sour cream

¼ cup heavy cream

Salt and pepper

Combine potatoes and 2 tablespoons oil in large bowl, cover, and microwave until tender, 10 to 12 minutes, stirring once halfway through cooking.

Add ½ cup sour cream and ¼ cup cream and mash with potato masher until combined. Season with salt and pepper to taste. Cover and keep warm.
