egg salad 007

This is one of my favorite childhood sandwiches. Everyone has had it at one time or another, and you only need a few ingredients to make this classic your own. This is my perfect egg salad.

  • 6 hard-boiled eggs, peeled and diced
  • 1/4 cup mayonnaise
  • 1 Tablespoon minced fresh parsley leaves
  • 1/2 medium celery rib, chopped fine (optional)
  • 2 teaspoons mustard
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • black pepper, to taste

Dice hard-boiled eggs, place in a bowl and set aside.

Mix all other ingredients together, and pour dressing over chopped eggs.

Serve immediately or chill first (as I prefer) for at least 1 hour.
