No fancy ingredients here just plain ole good southern cornbread. If you’re looking for a really good cornbread recipe, don’t overlook this one. I’m getting ready for Thanksgiving and just made this skillet of cornbread for my dressing. For the best dressing use two-day old bread. You may also like my Crock pot Dressing.

  • 1 cup self-rising cornmeal
  • ½ cup self-rising flour
  • ¾ cup buttermilk
  • 2 eggs
  • 3 Tablespoon melted butter, or bacon drippings
  • Preheat the oven to 400
  • Pour enough oil in cast iron skillet to coat the bottom and sides, place oiled skillet in preheated oven to get hot, about 10 mins.
  • In a bowl, stir together the cornmeal & flour.
  • Add in the buttermilk, eggs & butter. Stir until combined.
  • Carefully remove hot skillet from oven and pour in batter.
  • Reduce oven temperature to 350 degrees and bake for about 20-25 minutes or until set.
